Almost pillowy when fresh
Thick slices of barbecued pork can be a bit of a grind to eat, but not the ones by Kim Hock Seng, which are thick yet almost pillowy when eaten fresh. When it is days older, it becomes a bit chewier. The meat is not too fatty and the flavouring is neither too heavy nor cloying.
