    For pancakes

    2 cups all-purpose flour

    2½ tsp baking powder

    ½ tsp salt

    1 egg, beaten lightly

    1½ cups milk

    2 tbsp butter, melted

    3 tbsp chocolate powder

    40ml cherry-red food colouring

    100g sugar

    For cream-cheese frosting

    250g cream cheese

    150g powdered sugar

    18ml milk


    1. Preheat a griddle to medium heat. In a bowl, use a whisk to combine the flour, sugar, baking powder, cocoa powder and salt. Set aside.

    2. In a separate bowl, whisk the eggs, then add the milk, butter and food colouring, whisking to combine completely. Stir the dry ingredients into the wet ingredients, mixing just until combined. Do not overmix.

    3. Brush a little butter or spray non-stick cooking spray on the hot griddle, and spoon batter into desired-sized pancakes. Cook until bubbles form in the batter, the edges are dry and the underside is light brown - about 5 minutes - then flip over and cook the other side for 1 to 2 minutes. Repeat until all of the batter is used.

    4. As the pancakes cook, make the cream-cheese frosting: In a small bowl, use a fork to mix the cream cheese and powdered sugar. Add a little milk for your desired consistency.
